Braised Goat Shoulder with Root Vegetables

Ingredients Notes:
- 3-4 lb goat shoulder, bone-in
- 2 tbsp olive oil
- 1 onion, chopped
- 3 carrots, peeled and cut into chunks
- 2 parsnips, peeled and cut into chunks
- 2 cups beef or vegetable broth
- 1 cup red wine or water (optional)
- 2 sprigs thyme or rosemary
- Salt and pepper to taste

Instructions:
- Preheat your oven to 325°F (165°C).
- Heat olive oil in the Dutch oven over medium-high heat. Sear the goat shoulder on all sides until browned.
- Remove the goat shoulder and set it aside. In the same pot, sauté the onions, carrots, and parsnips for about 5 minutes.
- Add broth, wine (if using), and thyme or rosemary. Stir well, then return the goat shoulder to the pot.
- Cover and braise in the oven for 3.5–4 hours or until the meat is fork-tender.
