Ingredients Notes:
- 2 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 potatoes, diced
- 2 carrots, sliced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 sprigs rosemary
- Salt and pepper to taste
Recipe Notes: A comforting beef stew made in your VAV GET Dutch Oven will become a staple. The even heat ensures the beef becomes melt-in-your-mouth tender while absorbing all the delicious flavors of the broth. You can also add parsnips or mushrooms for an extra touch of flavor.
Instructions:
- Heat the olive oil in your Dutch oven over medium-high heat and brown the beef stew meat.
- Remove the beef and set aside. In the same pot, sauté the chopped onion for 5 minutes.
- Add the garlic and cook for 1 more minute before adding the carrots, potatoes, broth, and wine (if using).
- Stir in rosemary and season with salt and pepper. Bring to a simmer.
- Cover and cook in the oven at 325°F (165°C) for 2-3 hours, or until the beef is tender.
